10 minute Pita bread pizza

One of my staple go-to meals in law school was the pita bread pizza. Sometimes, simple meals are the best. I hadn’t made this pita bread pizza in years! I randomly decided to make it today for lunch in an effort to get rid of leftovers.

Pick two vegetables and any protein (or keep it vegetarian), some tomato sauce and cheese to top your pita, and you have instant lunch or dinner in 10 minutes. I happened to use leftover onions, zucchini and shredded pork tenderloin, but feel free to use any vegetable or protein of our choice, as long as it is cut thin so it cooks quickly.

The pita crisps up quite quickly, so it takes very little time to cook. Als Depending on the size of your appetite, you can eat one or two of these, or pair it with soup or salad. This is also a kid-friendly meal.


Pita bread pizza

Prep time: 0-5 mins (if you already have leftovers chopped, then no prep time at all!)

Cook time: 10 mins

Ingredients: (this makes 1 pita pizza, so double it if you want two)

  • half cup of diced onion
  • half cup of diced zucchini
  • half cup of shredded pork (shredded chicken, turkey slices or pepperoni works too)
  • 1 cup of your choice of tomato or pasta sauce
  • 3/4 cup of your choice of grated cheese (I used marble)
  • dash of olive oil
  • 1 whole wheat pita bread

Steps:

  1. Set oven to bake at 350F degrees.
  2. Brush the pita with olive oil to get it to crisp well.
  3. Spread tomato sauce evenly over the pita.
  4. Add onion, then zucchini, and then the shredded pork.
  5. Add cheese and spread evenly over the pita.
  6. Place pita on baking sheet and cook for 10 minutes, and enjoy!
